MelissaJoanne (822 days ago) Butter generally makes a cake yellow, using shortening instead can help make it white. Vanilla also colors a cake, and is either not used at all or special clear vanilla is used in white cake. You can omit cocoa (as long as your wet to dry ingredients are still balanced), but it won`t be necessarily be a white cake, depending on your other ingredients (egg yolk also contributes to a yellow color).
