05-10-2008 - Chocolate Banana Bread YummyMy mood while writing this blog:

1 cup sugar
1 1/2 cups all-purpose flour
1/2 cup butter (rm temp)
2 large eggs (rm temp)
1 1/2 cups mashed ripe bananas
1/3 cup unsweetened cocoa (I use dutch-processed when I can)
1 tablespoon baking powder
1/2 teaspoon salt
you can add 1/2 1 cup chopped pecans if you like

Butter and flour a loaf pan
in bowl with mixer on high speed beat 1/2 cup butter and sugar until fluffy (aprx 3 mins) scraping bowl occasionally. Add eggs and beat until well blended. Stir in bananas.

In small bowl mix flour, cocoa, baking powder and salt. Add to banana mixture and mix just until evenly moistened. Stir in nuts if wanted. Pour batter into prepared pan. Bake in 350 degree F oven until toothpick comes out clean when inserted into middle of loaf, 45 to 55 mins. Cool in pan on a rack for 10 mins then invert loaf from pan and cool completely for about an hour.
