This is a healthy chocolate cake from the "Eating Well when You're Expecting" book. No sugar!
1/2 ground toasted almonds (grind in food processor or blender)
1/2 cup white flour
1/2 cup whole wheat flour
1/4 cup ground flaxseed or wheat germ
2 teaspoons baking powder
1 teaspoon baking soda
3/4 cup unsweetened cocoa
2 cups white grape juice concentrate
4 tablespoons butter, melted
3 large eggs
1 tablespoon vanilla
-preheat oven to 350, coat 9x13 non-stick pan with vegetable oil cooking spray
-mix dry ingredients
-mix wet ingredients in separate bowl with electric mixer or whisk
-beat dry ingredients into wet ingredients
-pour into pan
-bake approximately 30 minutes
*If you can't find white grape juice concentrate (I never can) use apple or peach juice concentrate instead
*can serve with whipped cream or vanilla frozen yogurt

Monday, 9 Mar have you made this? i just put a pan of brownies in the oven...not so healthy. I used whole wheat flour but i dont think that makes up for the sugar and butter and chocolate. i'll have to try your recipe. thanks! EloiseAndHarrys-Mummy! -
