| 28-5-2008 - Udon Noodles with Asian Peanut Sauce | My mood while writing this blog:Ok |
1 cup broccoli or asparagus (frozen and thawed or fresh and cut into 1-inch pieces)
Soy sauce to taste
For the peanut sauce:
- 1 cup natural peanut butter
- 2 1/2 tbsp soy sauce
1 or 2 tsp seasoned rice vinegar
1/4 tsp cayenne (more if you like it hot)
2/3 cup boiling water
Minced garlic to taste
Put all ingredients into food processor adding additional water if necessary to create a thick pourable sauce

Cook noodles in boiling water for 1 minute less than indicated on the package. Add broc or asparagus to the pot two minutes before the noodles are done. Drain, transfer to a large bowl, then add the peanut sauce.
