09-11-2009 - Just made the best tasting spanish rice! Wanted to share :)

My mood while writing this blog: Ok

Just made the BEST spanish rice I've ever made!! I searched online for various ones and this is the one with the best ratings. (I modified it some for my personal tastes) (I used medium salsa but if you arent into spicy mix 50/50 medium/mild or just use mild.)

In pan cook 1/2 - 3/4 lb hamburger, 1 sm green pepper, half sweet onion finely chopped. Set aside.

In skillet lightly brown 1.5 cups jasmine rice in 2 tablespoons olive oil. When ready add 1.25-1.50 cups medium salsa (I use tostitos) 2.25-2.50 cups chicken broth, and onion/pepper/ burger mix. Cover & simmer 20 mins or til rice is fully cooked. Let stand 5-10 mins to absorb :) Oh its SO good!!

I think next time I may add some beans too ~ Will let you know how it goes :)
