This comes from the Kraft food & family magazine that is free and is delivered several times a year. It is ridiculously easy to make. I will definitely be happy to have this recipe when Little John is old enough to eat it because it is tasty and fast.

2 c rotini or penne pasta, uncooked

1/2 lb. hot or mild Italian sausage

1 pkg (6 oz.) baby spinach leaves (7 cups)

1 can (14 and 1/2 oz.) diced tomatoes with basil, garlic, and oregano, undrained

1 c Kraft Shredded Low-Moisture Part-Skim mozzarella cheese

2 tbsp Kraft 100% grated parmesan cheese

Cook pasta as directed on package.

Meanwhile, crumble meat into large deep skillet. Cook on medium-high heat 10 to 12 min. or until cooked through, stirring occasionally; drain. Add spinach and tomatoes; cook 2 min. or until spinach is wilted, stirring occasionally. Remove from heat; cover to keep warm.

Drain pasta; return to pot. Add meat mixture and cheeses; toss lightly.

Makes 6 servings, 1 cup each.

Okay, I just had to say your posts in week 38 are freakin' cracking me up. You poor things need something to laugh about so as not to constantly think about being in labor. I'll be there in 9 weeks, on my gosh. (My favorite was the Robin Hood song reference, NICE.) Now it's stuck in my head.

This sounds really good, but I am now freaked out by the tomato scare. It is really really bad for me here because I live in the tomato capital, so I cannot even drive by our football stadium, the tomato bowl without wanting some so badly. :( Love spinach too, yum.
