02-5-2008 - Recipe - Brocolli Cornbread

This makes a bunch -its the consistency of cornbread but heavy. Great for big gathering or church

2 pkgs Jiffy Cornbread mix

12 oz cottage cheese

4 eggs

10 oz brocolli chopped - cooked and drained

5 medium green onions chopped tops and all

1 stick margarine melted

In a LARGE bowl, stir all ingredients together. Batter may seem dry , but mix no more liquid.

Take additional 1/2 stick butter and melt in 9x13 pan in the oven - Pour batter over melted butter in pan. Bake at 350 degrees for 40 minutes or until golden brown.
