28-5-2008 - Blue Cheese Potato Salad

My mood while writing this blog: Ok

5 lbs. new potatoes

1/2 cup dry white wine (I used gewurtztraminer b/c that's what I had on hand)

1 1/4 cups real mayo

1 1/4 cups sour cream

2 1/2 tbsp. dijon mustard

2 1/2 tbsp. cider vinegar

1/2 lb. crumbled blue cheese

3 or 4 green onions, chopped (or more if you want)

1 1/2 cups finely chopped celery

1. Boil or steam potatoes till tender, peel and cut into 1 inch cubes

2. Toss potatoes with wine, salt, and pepper

3. Combine remaining ingredients and mix with potatoes
