What do you do when it is early morning and you are awake because your child woke up for a moment to cry, and she went back to sleep and you cannot? Post recipes!!!

This is in honor of Halloween, I'm a huge fan of seeminly disgusting or otherwise funny halloween food.

Witch’s Finger Cookies

1 cup butter, softened

1 cup sugar

1 egg

1 tsp. almond extract

1 tsp. vanilla extract

2 ¾ cup flour

1 tsp. baking powder

1 tsp. salt

¾ cup whole blanched almonds

Red food coloring and/or 1 tube red decorator gel

Makes about 5 dozen cookies

Preheat oven to 325 degrees. Combine dry ingredients. Lightly grease a cookie sheet.

In a large bowl, beat together butter, sugar, egg, almond extract and vanilla; beat in dry ingredients. Cover and refrigerate dough for 30 minutes.

Working with ¼ of the dough at a time and keeping remaining dough refrigerated, roll heaping teaspoonfuls full of dough into finger shape for each cookie. Remember that the cookies will flatten some while baking, so make them skinner than you want to final cookies to be. Press an almond firmly into one end for nail. Squeeze in center to create a knuckle shape and use a paring knife to make slashes in several places to form the knuckle. To paint the nail, use some red food coloring that’s been diluted with water and brush on with a clean artist’s brush. Or if you are not afraid of dying your finger, simply drop the almonds into a container of dye before putting them on the finger.

Place cookies on the prepared cookie sheet and bake for 20-25 minutes or until pale golden. Let cool for three minutes. If desired, lift up almond and squeeze red decorator gel onto nail bed and press almond back in place so gel oozes out from underneath.

Remove from cookie sheet and let cool on a wire rack. Repeat with remaining dough.

Note: If you want to make toes instead of fingers, make the cookies shorter and fatter, and leave off the red coloring from the almond “nail”. If you want to increase the variety of the cookies by making different “skin tones”, then add some cocoa to the recipe. You can separate the batter before refrigerating and add cocoa to a portion of the batter before shaping the cookies. I like to create an interesting variety by having different skin tones in addition to painted and unpainted nails.
